Ingredients
- 2 pounds boneless, skinless chicken thighs
- 1.5 pounds baby potatoes (red and yellow mix)
- 6 cloves garlic, minced (about 2 tablespoons)
- 1 cup freshly grated Parmesan cheese (about 100g)
- 4 tablespoons butter (60g)
- 2 tablespoons olive oil (30ml)
- 2 teaspoons Italian seasoning
- Salt and pepper to taste
- 1 cup low sodium chicken broth (240ml)
- Fresh parsley, chopped (optional, for garnish)
Instructions
- Rinse baby potatoes and cut larger ones in half for even cooking. Mince garlic, grate Parmesan, and pat chicken thighs dry.
- Optional: Heat olive oil and 2 tablespoons butter in a large skillet over medium-high heat. Season chicken thighs with salt, pepper, and Italian seasoning. Sear chicken for about 3 minutes per side until golden brown but not cooked through.
- Place baby potatoes at the bottom of the crockpot, sprinkle with salt and pepper, then add seared chicken thighs on top.
- In the same skillet, reduce heat to medium and add remaining 2 tablespoons butter. Add minced garlic and sauté for 1 minute until fragrant. Pour in chicken broth and stir in grated Parmesan. Simmer for 1-2 minutes until cheese melts and sauce thickens slightly.
- Pour garlic Parmesan sauce over chicken and potatoes in the crockpot, coating everything evenly.
- Cover and cook on low for about 4 hours, until chicken is tender and potatoes are soft when pierced with a fork.
- Before serving, sprinkle chopped fresh parsley over the dish. Serve straight from the crockpot.
Notes
Searing the chicken before slow cooking adds flavor but is optional. Use fresh Parmesan for best sauce texture. Adjust salt carefully due to Parmesan and broth. If sauce is too thin after cooking, thicken with extra Parmesan or a cornstarch slurry. Can substitute sweet potatoes or add mushrooms for variation. Use chicken breasts with reduced cooking time to avoid dryness. For dairy-free, use dairy-free Parmesan-style cheese and coconut oil instead of butter.
