Description
A vibrant and refreshing salad packed with winter greens, pomegranate seeds, orange slices, and a tangy citrus dressing—perfect for balancing out heavy holiday dishes.
Ingredients
- Kale
- Arugula
- Spinach
- Pomegranate seeds
- Orange slices (navel or blood oranges)
- Candied pecans
- Crumbled feta cheese
- Red onion (thinly sliced)
- Olive oil
- Fresh orange juice
- Dijon mustard
- Honey
- Salt
- Pepper
Instructions
- Wash and dry your greens thoroughly. Tear kale leaves into bite-sized pieces, and combine with arugula and spinach in a large bowl.
- Peel and slice the orange into thin rounds or segments. Optionally, cut them into supremes for a prettier presentation.
- If using a fresh pomegranate, cut it in half and gently tap the back with a wooden spoon to release the seeds.
- In a small bowl, whisk together olive oil, orange juice, Dijon mustard, honey, salt, and pepper to make the dressing. Adjust seasoning to taste.
- Add the orange slices, pomegranate seeds, red onion, and feta to the greens. Toss gently with the dressing to coat evenly.
- Sprinkle the candied pecans over the top for a festive touch.
