- 2 pounds chicken breasts or thighs (about 900g)
- 3 garlic cloves, minced
- 1 medium onion, sliced
- 1 cup chicken broth (240ml), low-sodium preferred
- 2 tablespoons olive oil
- Salt and pepper to taste
- 1 teaspoon Italian seasoning (or equal parts dried basil, oregano, and thyme)
- Optional add-ins: red pepper flakes, lemon juice, soy sauce
Instructions
- Spray the inside of your slow cooker with cooking spray to prevent sticking.
- In a mixing bowl, toss chicken with olive oil, salt, pepper, minced garlic, and Italian seasoning until well coated.
- Layer sliced onions at the bottom of the crockpot, place the seasoned chicken on top, and pour chicken broth over everything. Do not stir.
- Cover and cook on low for 4 to 6 hours, or on high for 2 to 3 hours if short on time.
- Check that the chicken reaches an internal temperature of 165°F (74°C) and is easy to shred with a fork. If not done, cook for an additional 30 minutes and check again.
- Serve whole or shred the chicken in the crockpot using two forks.
Notes
Do not lift the lid during cooking to maintain heat. Use chicken thighs for juicier results. For thicker sauce, remove chicken and simmer liquid on stove for 5-10 minutes. Can prep seasoning and layering the night before and refrigerate. Variations include BBQ sauce, Mexican spices, Italian herbs, lemon garlic, or creamy additions.
