Description
A light, fluffy, and fresh summer dessert combining fresh strawberries, whipped topping, cream cheese, and mini marshmallows. Ready in just 5 minutes, perfect for backyard barbecues and potlucks.
Ingredients
- 4 cups fresh strawberries, hulled and sliced
- 1 cup mini marshmallows
- 8 oz whipped topping (store-bought Cool Whip or homemade whipped cream)
- 4 oz cream cheese, softened
- ½ cup powdered sugar
- 1 teaspoon vanilla extract
Instructions
- Rinse, hull, and slice about 4 cups of fresh strawberries. Set aside in a large mixing bowl.
- If not already softened, microwave the cream cheese for 10-15 seconds until soft but not melted.
- Using a mixer on medium speed, beat the cream cheese and ½ cup powdered sugar until smooth and creamy.
- Pour 1 teaspoon vanilla extract into the cream cheese mixture, then gently fold in the entire 8 oz container of whipped topping, keeping it light and fluffy.
- Add 1 cup mini marshmallows and the sliced strawberries to the bowl. Fold everything together gently with a spatula until combined.
- Chill the salad for 30 minutes if desired to let flavors meld and marshmallows soften slightly, or serve immediately.
Notes
Softening the cream cheese is essential for a smooth texture. Fold whipped topping gently to keep the fluff airy. Use fresh strawberries for best flavor. Chill for 30 minutes to meld flavors but do not store longer than 24 hours to avoid marshmallows dissolving and watery texture. Mix-ins like nuts or mini chocolate chips can be added for variety.
