Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, beat the softened butter, granulated sugar, and brown sugar until light and fluffy, about 3-4 minutes.
  3. Beat in the egg and vanilla extract until fully combined, about 1-2 minutes.
  4. In a separate bowl, whisk together the flour, baking powder, and salt.
  5. Gradually add the dry ingredients to the wet mixture, folding gently until just combined. Do not overmix.
  6. Gently fold in the fresh raspberries using a rubber spatula to keep them intact.
  7. Drop tablespoon-sized mounds of dough onto a parchment-lined baking sheet, spacing about 2 inches apart.
  8. Bake for 12-15 minutes until edges are set and tops look matte but not browned.
