A comforting and flavorful slow cooker Salisbury steak with tender hamburger patties in a rich mushroom and onion gravy. Perfect for busy weeknights and hands-off cooking.

- 1.5 lbs ground beef (80/20)
- ½ cup breadcrumbs (60g), plain or Italian-seasoned
- ⅓ cup milk (80ml)
- 1 large egg
- 1 tsp onion powder
- Salt and pepper to taste
- 8 oz sliced mushrooms (225g), fresh white or baby bellas
- 1 medium yellow onion, sliced
- 2 cups beef broth (475ml), low-sodium
- 2 tbsp Worcestershire sauce
- ¼ cup flour (30g), all-purpose or whole wheat
- 2 tbsp butter (28g)
- ½ tsp garlic powder
Instructions
- In a large bowl, combine ground beef, breadcrumbs, milk, egg, onion powder, garlic powder, salt, and pepper. Mix gently until just combined. Shape into 6 oval patties and set aside.
- Heat butter in a large skillet over medium heat. Add sliced mushrooms and yellow onion. Cook until softened and golden brown, about 6-8 minutes. Season lightly with salt and pepper.
- Optional: Brown the patties in the same skillet for 2-3 minutes per side for extra flavor and better texture.
- Place browned or raw patties in the bottom of a 6-quart slow cooker. Pour the mushroom and onion mixture over them.
- In a bowl, whisk together beef broth, Worcestershire sauce, and flour until smooth. Pour over the patties and mushrooms in the slow cooker. Stir gently to combine without breaking patties.
- Cover and cook on low for 6 to 7 hours or on high for 3 to 4 hours until patties are tender and gravy is thick.
- Before serving, stir the gravy gently. If too thin, mix 1 tbsp cornstarch with 2 tbsp cold water and stir in. Cook on high for 10-15 minutes until thickened.
Notes
Browning the patties before slow cooking adds flavor and helps patties hold together better. Use fresh mushrooms for best flavor. Avoid lifting the slow cooker lid during cooking to maintain temperature. If gravy is too thin, thicken with cornstarch slurry. Leftovers reheat well in microwave or stovetop with a splash of broth.
