- 4–6 bone-in, skinless chicken thighs
- 6 oz (about 6 cups) classic herb stuffing mix
- 2 cups (480 ml) chicken broth
- 4 tbsp (60 g) unsalted butter, melted
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 tsp dried thyme
- 1 tsp dried sage
- Salt and pepper to taste
- Optional: ½ cup (50 g) chopped celery
Instructions
- Spray the inside of your slow cooker with non-stick cooking spray or lightly butter it to prevent sticking.
- Optional: Sauté chopped onion, garlic, and celery in 1 tbsp butter until softened and fragrant, about 5-7 minutes.
- In a mixing bowl, combine stuffing mix, chicken broth, melted butter, thyme, sage, salt, and pepper. Stir until stuffing absorbs liquid but is not soupy. Fold in sautéed veggies if used.
- Spread half of the stuffing mixture evenly at the bottom of the slow cooker.
- Place chicken thighs on top of the stuffing in a single layer.
- Cover chicken with the remaining stuffing mixture, gently pressing it down.
- Cover and cook on low for 4 to 5 hours until chicken reaches an internal temperature of 165°F (74°C) and stuffing is tender.
- Optional: Broil the top in the oven for 3-5 minutes to crisp the stuffing edges.
- Serve directly from the slow cooker, scooping portions with chicken and stuffing.
Notes
Use bone-in chicken thighs for juiciness; sauté aromatics for deeper flavor; do not open slow cooker lid during cooking to maintain temperature; broil stuffing top for crispy edges if desired; adjust broth if stuffing looks dry before cooking.
