A quick and delicious snack featuring a nutty pistachio twist on classic puppy chow, coated in white chocolate and powdered sugar for a sweet, crunchy treat.

- 6 cups rice Chex cereal (about 150g)
- 1 cup shelled, unsalted pistachios (125g), half chopped, half whole
- 1 cup white chocolate chips (175g)
- 4 tablespoons unsalted butter (56g)
- 1 teaspoon pure vanilla extract
- 1 ½ cups powdered sugar (180g), sifted
- Pinch of salt
Instructions
- Melt the white chocolate chips and butter together in a microwave-safe bowl in 30-second bursts, stirring between each until smooth and creamy. Stir in the vanilla extract.
- In a large mixing bowl, gently toss the Chex cereal and pistachios together.
- Pour the melted chocolate mixture over the cereal and pistachios. Fold gently with a spatula until every piece is evenly coated.
- Transfer the coated cereal into a large Ziploc bag or sealable container. Add the powdered sugar and a pinch of salt. Seal and shake vigorously until well coated.
- Spread the puppy chow on a baking sheet lined with parchment paper to cool and set for 10-15 minutes. Once cooled, transfer to a bowl or airtight container for storage.
Notes
Do not overheat the white chocolate and butter to avoid graininess. Use a large enough bag to shake the coated cereal to prevent bursting. Let the coated puppy chow cool completely to avoid sticking. Store in airtight containers to keep crisp. For dairy-free, substitute butter with coconut oil and use dairy-free white chocolate chips.
