Description

This Easy Pineapple Cake is a delightful treat that’s perfect for any occasion, bursting with the bright flavors of pineapple and incredibly simple to make.

  • 2 cups all-purpose flour
  • 1 ½ cups sugar
  • 1 tablespoon baking powder
  • ½ cup unsalted butter, softened
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup crushed pineapple (with juice)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prepare your baking pan by greasing it with butter or cooking spray.
  3. In a mixing bowl, combine 2 cups of all-purpose flour, 1 ½ cups of sugar, and 1 tablespoon of baking powder. Mix well.
  4. In another bowl, cream together ½ cup of softened butter and 3 large eggs until light and fluffy. Add 1 teaspoon of vanilla extract and mix until combined.
  5. Gradually add the dry ingredients to the wet mixture, alternating with 1 cup of crushed pineapple (with juice). Mix until just combined.
  6. Pour the batter into the prepared baking pan and spread it evenly. Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.
  7. Once baked, remove the cake from the oven and let it cool in the pan for about 10 minutes. Then, transfer it to a cooling rack to cool completely.
  8. Optional: Top with whipped cream, shredded coconut, or even a drizzle of caramel for extra flair!

Notes

For a richer flavor, consider using brown sugar or coconut sugar. You can also add shredded coconut or chopped nuts for variations.
