- 1 tablespoon baking powder
- ½ cup unsalted butter, softened
- 3 large eggs

- 1 cup crushed pineapple (with juice)
Instructions
- Preheat your oven to 350°F (175°C).
- Prepare your baking pan by greasing it with butter or cooking spray.
- In a mixing bowl, combine 2 cups of all-purpose flour, 1 ½ cups of sugar, and 1 tablespoon of baking powder. Mix well.
- In another bowl, cream together ½ cup of softened butter and 3 large eggs until light and fluffy. Add 1 teaspoon of vanilla extract and mix until combined.
- Gradually add the dry ingredients to the wet mixture, alternating with 1 cup of crushed pineapple (with juice). Mix until just combined.
- Pour the batter into the prepared baking pan and spread it evenly. Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.
- Once baked, remove the cake from the oven and let it cool in the pan for about 10 minutes. Then, transfer it to a cooling rack to cool completely.
- Optional: Top with whipped cream, shredded coconut, or even a drizzle of caramel for extra flair!
Notes
For a richer flavor, consider using brown sugar or coconut sugar. You can also add shredded coconut or chopped nuts for variations.
