- 1 cup grated Parmesan cheese (100g)
- 1 cup Italian seasoned breadcrumbs (100g)
- ½ cup all-purpose flour (60g)
- 2 large eggs
- 1 teaspoon garlic powder
- Salt and freshly ground black pepper, to taste
- 3 tablespoons olive oil or vegetable oil
- 2 tablespoons butter (optional)
- Chopped fresh parsley (optional, for garnish)
Instructions
- Place chicken breasts between two pieces of plastic wrap or parchment paper. Gently pound them to about ½ inch (1.3 cm) thickness.
- Set up breading stations: In one shallow bowl, mix flour with a pinch of salt and pepper. In a second bowl, whisk the eggs. In a third bowl, combine Italian seasoned breadcrumbs, grated Parmesan cheese, and garlic powder.
- Dredge each chicken piece in the flour, shaking off excess. Dip into the egg wash, then press into the breadcrumb-Parmesan mixture, coating both sides well and pressing firmly.
- Heat a large skillet over medium heat. Add olive oil and butter, letting the butter melt and foam without burning.
- Add coated chicken breasts to the hot pan without overcrowding. Fry until golden brown and crispy on one side, about 6-7 minutes. Flip and cook the other side for another 6-7 minutes until internal temperature reaches 165°F (74°C) or juices run clear.
- Transfer cooked chicken to a plate lined with paper towels to drain excess oil. Let rest for 3 minutes.
- Garnish with chopped fresh parsley before serving.
Notes
Use real grated Parmesan cheese for best crust. Press breadcrumbs firmly to ensure they stick. Cook over medium heat to avoid burning the crust. Rest chicken after cooking to keep it juicy. For a lighter version, bake at 400°F (200°C) for 20-25 minutes on a wire rack, flipping halfway. Gluten-free breadcrumbs can be used as a substitute.
