Ingredients

Scale
  • 1 lb (450g) boneless, skinless chicken breasts, cut into 1-inch cubes
  • Salt and pepper, to taste
  • 1 tbsp (15ml) olive oil
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1/2 cup (120ml) honey
  • 1/4 cup (60ml) soy sauce
  • 2 tbsp (30ml) rice vinegar
  • 1 tbsp (15ml) sriracha (or more, to taste)
  • 1 tsp (5ml) grated ginger
  • 1 minced garlic clove
  • 1/2 tsp (2.5ml) black pepper
  • 1/4 tsp (1.25ml) red pepper flakes (optional)
  • 1 lb (450g) pasta (penne, rotini, or your favorite shape)
  • 1/4 cup (30g) chopped green onions

Instructions

  1. Season the chicken generously with salt and pepper.
  2. Heat olive oil in a large skillet or wok over medium-high heat.
  3. Add the chicken and cook, stirring occasionally, until browned and cooked through (6-8 minutes).
  4. Add the sliced red and green bell peppers to the skillet and cook for 2-3 minutes.
  5. Stir in the honey, soy sauce, rice vinegar, sriracha, grated ginger, minced garlic, black pepper, and red pepper flakes.
  6. Bring the mixture to a simmer and cook for 2-3 minutes until the sauce thickens slightly.
  7. Meanwhile, cook the pasta according to package directions (8-10 minutes).
  8. Drain the pasta and add it to the skillet with the chicken and sauce.
  9. Toss to coat and heat through (about 2 minutes).
  10. Garnish with chopped green onions and serve immediately.

Notes

For a creamy variation, stir in a splash of heavy cream or coconut milk. To make it spicier, add extra sriracha or chopped jalapeños. Leftovers can be stored for up to 3 days in the refrigerator.
