- 1.5 lbs boneless, skinless chicken breasts
- 2 tablespoons olive oil
- 2 tablespoons lemon juice
- 3 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- Salt and freshly ground black pepper to taste
- 2 tablespoons butter
- 1 cup heavy cream
- 2 tablespoons fresh parsley, chopped
Instructions
- In a bowl, combine chicken, olive oil, lemon juice, garlic, oregano, thyme, salt, and pepper. Marinate for at least 30 minutes.
- Thread marinated chicken onto skewers, leaving space between pieces.
- Preheat grill to medium-high and clean the grates.
- Grill chicken for 5–6 minutes per side until charred and cooked through (165°F/74°C internal temperature).
- Meanwhile, melt butter in a saucepan. Add garlic and cook for 1 minute. Stir in heavy cream, parsley, salt, and pepper. Simmer for 2–3 minutes.
- Toss grilled chicken bites in the creamy garlic sauce and serve hot.
Notes
Use a meat thermometer for accuracy. Add smoked paprika to the marinade for extra depth. Don’t overcrowd the grill for best results.
