- 1.5 lbs (680g) ground chicken
- 1 cup (100g) breadcrumbs
- 1/2 cup (50g) freshly grated Parmesan cheese
- 4 cloves garlic, minced
- 2 large eggs
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon dried oregano
- 2 tablespoons chopped fresh parsley
- Olive oil for greasing
Instructions
- Preheat oven to 375°F (190°C). Grease a 9×5 inch loaf pan with olive oil.
- In a large bowl, gently combine ground chicken, breadcrumbs, Parmesan cheese, minced garlic, eggs, salt, pepper, oregano, and parsley. Do not overmix.
- Shape the mixture into a loaf and place it into the prepared loaf pan.
- Bake for 45-50 minutes or until a meat thermometer inserted into the center reads 165°F (74°C).
- Remove from oven and let rest for 10 minutes before slicing and serving.
Notes
Use fresh garlic and Parmesan for the best flavor. Don’t overmix the meat mixture to keep the meatloaf tender. Let it rest before slicing to allow juices to redistribute.
