- 4 cups cauliflower florets (~400g), fresh or frozen
- 8 oz cremini or white mushrooms (225g), sliced
- 4 large garlic cloves, minced
- 3 tablespoons unsalted butter (42g)
- 1 tablespoon olive oil (15ml)
- 1 teaspoon fresh thyme or ½ teaspoon dried thyme
- Salt and freshly ground black pepper, to taste
- 1 tablespoon lemon juice (15ml)
- Optional: ¼ teaspoon red pepper flakes
Instructions
- Preheat the skillet over medium heat. Add olive oil and butter together and heat until butter melts and foams gently.
- Add minced garlic and stir constantly for about 1 minute until fragrant but not browned.
- Add sliced mushrooms, spread out to avoid crowding. Let cook undisturbed for 2 minutes to sear, then stir occasionally for 5-6 minutes until soft and browned.
- Add cauliflower florets, salt, pepper, and thyme. Stir well to coat. Cover pan with lid and steam for 5 minutes.
- Remove lid and cook uncovered for 3-5 minutes, stirring occasionally to get crispy edges on cauliflower.
- Taste and adjust salt and pepper. Add lemon juice and red pepper flakes if using. Stir and remove from heat.
- Serve immediately, optionally alongside your favorite protein.
Notes
Do not overcrowd the pan to ensure proper browning. Use fresh garlic for best flavor. Combine butter and olive oil to prevent burning. Steam cauliflower under lid before finishing uncovered for crispy edges. Add lemon juice at the end to brighten flavors. If skillet dries out, add a splash of water or broth carefully.
