These Easy French Toast Muffins are the ultimate make-ahead breakfast! Warm, cinnamon-spiced, and perfectly portioned, they’re a quick and satisfying way to start your day – great for meal prep, brunches, or even late-night cravings.

- 6 slices challah or brioche bread, cut into 1-inch cubes
- 4 large eggs
- 1 cup (240ml) whole milk
- 1 tsp vanilla extract
- 1 tsp ground cinnamon
- 1/4 tsp ground nutmeg
- 1/4 tsp salt
- 3 tbsp (45g) melted butter
Instructions
- Preheat oven to 350°F (175°C). Grease a 12-cup muffin tin or line with paper liners.
- In a large bowl, whisk together eggs, milk, vanilla, cinnamon, nutmeg, and salt.
- Add bread cubes to the egg mixture and stir gently until all pieces are coated. Let soak for 5–10 minutes.
- Pour a bit of melted butter into each muffin cup. Then divide the bread mixture evenly among the cups, filling about ¾ full.
- Bake for 20–25 minutes, or until golden brown and set in the center. A toothpick should come out clean.
- Let muffins cool for a few minutes in the tin before transferring to a wire rack. Serve warm or store for later!
Notes
Use stale bread for best results – it soaks up the custard better! Add a sprinkle of brown sugar or a handful of blueberries for extra flavor. Don’t overbake or they may dry out.
