Ingredients
- 2 large English cucumbers
- ½ cup (115g) cream cheese, softened
- 2 tablespoons fresh dill, chopped
- 4 oz (115g) smoked salmon or turkey slices (optional)
- ½ teaspoon garlic powder
- 1 teaspoon fresh lemon juice
- Salt and pepper to taste
- Optional extras: capers, sliced olives, red pepper flakes
Instructions
- Wash and dry cucumbers thoroughly. Slice into ¼-inch thick rounds. Pat dry with paper towels to remove moisture.
- In a medium bowl, combine softened cream cheese, chopped dill, garlic powder, lemon juice, salt, and pepper. Stir until evenly mixed and fluffy. Adjust seasoning to taste.
- Spread a thin layer of the cream cheese mixture on one cucumber slice. Add a small piece of smoked salmon or turkey if using. Top with another cucumber slice to form a sandwich. Press gently to stick together.
- Optionally, garnish each bite with a caper, olive slice, or sprinkle of red pepper flakes. Place assembled bites on a platter and chill in the fridge for at least 10 minutes before serving.
- Serve chilled and enjoy as a refreshing snack.
