Description

A hands-off slow cooker recipe for tender, flavorful shredded chicken tacos that are perfect for busy weeknights and family meals.


Ingredients

  • 2 pounds boneless, skinless chicken breasts or thighs
  • 1 cup low-sodium chicken broth
  • 2 tablespoons chili powder
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried oregano
  • 1 teaspoon salt (adjust to taste)
  • ½ teaspoon freshly ground black pepper
  • 1 tablespoon fresh lime juice
  • 812 soft corn or flour tortillas
  • Optional toppings: chopped cilantro, diced onions, sliced avocado, shredded cheese, sour cream, salsa

Instructions

  1. Pat chicken dry with paper towels. In a small bowl, mix chili powder, cumin, garlic powder, onion powder, oregano, salt, and black pepper. Rub spice blend evenly over chicken.
  2. Place seasoned chicken in the bottom of the crockpot. Pour chicken broth over the top. Optionally flip chicken to coat in broth.
  3. Cover and cook on low for 6 to 7 hours or on high for 3 to 4 hours until chicken is tender and shreddable.
  4. Remove chicken and shred using two forks while warm.
  5. Pour some cooking juices back over shredded chicken and squeeze fresh lime juice over it. Toss to combine and adjust seasoning if needed.
  6. Warm tortillas in a skillet or microwave. Assemble tacos with shredded chicken and desired toppings.
