- 2–3 pounds beef chuck roast
- 1 cup beef broth
- 1 teaspoon cumin
- 2 teaspoons chili powder
- 1 teaspoon smoked paprika
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1.5 teaspoons salt
- 0.5 teaspoon pepper
- 2 tablespoons fresh lime juice
- 1 medium white onion, diced
- A handful of fresh cilantro, chopped
- 12 small corn tortillas
- Optional toppings: diced tomatoes, jalapeño slices, crumbled queso fresco, hot sauce
Instructions
- Trim excess fat from the chuck roast, leaving a little for flavor. Rub the roast with cumin, chili powder, smoked paprika, garlic powder, onion powder, salt, and pepper.
- Place the seasoned beef into the crock pot. Pour in beef broth and lime juice. Add beer or tequila if desired.
- Cover and cook on low for 8 hours or high for 4-5 hours until the beef is fork-tender and easily shreds.
- Remove the beef and shred it using tongs or two forks. Return it to the crock pot and mix with the juices for extra flavor.
- Heat a skillet over medium-high heat and toast the tortillas for 30 seconds per side.
- Fill each tortilla with shredded beef, diced onion, chopped cilantro, and a squeeze of lime. Add optional toppings as desired.
