  • 4 pieces cube steak (about 1.5 pounds / 700g), tenderized round steak preferred
  • 1/4 cup all-purpose flour (30g)
  • Salt and freshly ground black pepper, to taste
  • 2 cups beef broth (475ml), low-sodium recommended
  • 1 packet onion soup mix (about 1 oz / 28g)
  • 2 tablespoons butter (28g)
  • 1 teaspoon garlic powder
  • 1 tablespoon Worcestershire sauce
  • Optional: 1 cup sliced mushrooms (70g)

Instructions

  1. Pat the cube steak dry with paper towels. In a shallow bowl, mix flour with salt, black pepper, and garlic powder. Dredge each piece of steak on both sides, shaking off excess. Set aside.
  2. Heat butter in a large skillet over medium-high heat. Brown the cube steak pieces 3-4 minutes per side until golden but not cooked through. Transfer browned steaks to the crock pot.
  3. In the same skillet, pour 1/2 cup beef broth and scrape browned bits. Add remaining beef broth, onion soup mix, and Worcestershire sauce. Stir and simmer for 2 minutes.
  4. Pour gravy mixture over the browned cube steak in the crock pot. Add mushrooms if using. Cover with lid.
  5. Cook on low for 6-8 hours or on high for 3-4 hours until steak is fork-tender and gravy thickened.
  6. Before serving, stir gravy gently. If too thin, mix 1 tablespoon cornstarch with 2 tablespoons cold water and stir into crock pot. Cook 15 more minutes to thicken. Adjust salt and pepper to taste.

Notes

Browning the cube steak before slow cooking adds flavor and keeps meat tender. Use tenderized round steak for best results. If gravy is too thin, thicken with cornstarch slurry. Mushrooms can be sautéed before adding for richer flavor. Let steak rest 10 minutes after cooking for juiciness.
