This Easy Crock Pot Chicken recipe is a set-it-and-forget-it meal that delivers tender, juicy chicken infused with mouthwatering flavors, perfect for busy weeknights.

- 2–3 chicken breasts or thighs (bone-in or boneless, skinless)
- 1 cup chicken broth
- 2–3 cloves garlic, minced
- 1 teaspoon onion powder
- 1 teaspoon paprika
- 1 teaspoon Italian seasoning
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 2 tablespoons olive oil
- 1 tablespoon lemon juice
Instructions
- Spray the inside of your slow cooker with non-stick cooking spray or rub it with a little olive oil.
- In a small bowl, mix together onion powder, paprika, Italian seasoning, salt, and pepper. Rub the mixture all over the chicken breasts or thighs.
- Place the seasoned chicken in the slow cooker. Drizzle olive oil and lemon juice over the top. Sprinkle the minced garlic evenly around the chicken. Pour chicken broth into the pot, avoiding pouring it directly over the chicken.
- Cover and cook on LOW for 6-7 hours or HIGH for 3-4 hours until the chicken is tender and easily shreds with a fork.
- Optional: Transfer the cooked chicken to a baking sheet, brush with a little more olive oil, and broil for 2-3 minutes for crispy edges.
- Remove the chicken from the slow cooker and shred or serve whole. Spoon some of the flavorful juices over the top before serving.
