Ingredients

  • 1 lb (450g) boneless, skinless chicken breasts, cut into bite-sized pieces
  • 8 oz (225g) egg noodles
  • 2 tablespoons vegetable oil
  • 1 small onion, thinly sliced
  • 2 cloves garlic, minced
  • 1 red bell pepper, thinly sliced
  • 1/2 cup (120ml) chicken broth
  • 1/4 cup (60ml) soy sauce
  • 2 tablespoons oyster sauce (optional)
  • 1 tablespoon brown sugar
  • 1 tablespoon cornstarch
  • 1 tablespoon rice vinegar
  • 1 teaspoon sesame oil
  • 1/2 teaspoon ground ginger
  • Chopped green onions for garnish

Instructions

  1. Cook egg noodles according to package directions. Drain and toss with a little oil to prevent sticking. Set aside.
  2. Cut chicken into bite-sized pieces. Thinly slice the onion and bell pepper, and mince the garlic.
  3. Heat 1 tablespoon of oil in a large skillet or wok over medium-high heat. Add chicken and stir-fry until cooked through and browned, about 7 minutes. Remove and set aside.
  4. In the same skillet, add the remaining oil. Stir-fry the onion, garlic, and bell pepper until softened, about 3-5 minutes.
  5. In a small bowl, whisk together chicken broth, soy sauce, oyster sauce (if using), brown sugar, cornstarch, rice vinegar, sesame oil, and ginger.
  6. Return chicken to the skillet, then pour in the sauce. Simmer for 1-2 minutes, stirring constantly until thickened.
  7. Add cooked noodles and toss everything together until evenly coated and heated through.
  8. Garnish with chopped green onions and serve immediately.

Notes

Use high heat and don’t overcrowd the skillet to keep the veggies crisp-tender. Feel free to substitute shrimp, tofu, or extra veggies. Prep all ingredients in advance for a smooth cooking process!
