  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1 pinch salt
  • 1 cup unsalted butter, softened
  • 2 cups granulated sugar
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups ricotta cheese
  • 1 cup powdered sugar
  • 1 cup mini chocolate chips
  • Chopped pistachios for topping

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grease your cake pans with butter and line the bottoms with parchment paper.
  3. In a mixing bowl, whisk together the flour, baking powder, and salt. Set aside.
  4. In another bowl, beat the softened butter and granulated sugar until light and fluffy, about 3-4 minutes.
  5. Beat in the eggs, one at a time, mixing well after each addition. Stir in the vanilla extract.
  6. Gradually mix in the dry ingredients until just combined.
  7. Divide the batter evenly between the two prepared pans and smooth the tops.
  8. Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
  9. Let the cakes cool in the pans for about 10 minutes, then transfer them to a cooling rack to cool completely.
  10. While the cakes cool, mix together the ricotta cheese, powdered sugar, and vanilla extract until smooth. Fold in the mini chocolate chips.
  11. Once the cakes are completely cool, place one layer on a serving plate, spread half of the ricotta filling on top, then add the second layer. Top with the remaining filling and sprinkle with chopped pistachios.
  12. Refrigerate the cake for at least 1 hour before serving.

Notes

For a gluten-free version, substitute all-purpose flour with a gluten-free blend. Ensure to use room temperature ingredients for a smoother batter.
