These Easy Blueberry Cheesecake Swirl Cookies combine the creamy richness of cheesecake with the sweet, tangy burst of blueberries, making them a delightful treat that’s quick to prepare.
Ingredients
Scale
- 1 ½ cups all-purpose flour
- 1 teaspoon baking powder
- ½ cup unsalted butter, softened
- 1 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 8 oz cream cheese, softened
- ¼ cup granulated sugar
- 1 teaspoon vanilla extract
- 1 cup fresh blueberries
- Pinch of salt
Instructions
- Preheat your oven to 350°F (175°C). Line your baking sheet with parchment paper.
- In a mixing bowl, cream together ½ cup of softened unsalted butter and 1 cup of granulated sugar until light and fluffy—about 2-3 minutes.
- Add in 1 large egg and 1 teaspoon of vanilla extract. Mix until well combined.
- In a separate bowl, whisk together 1 ½ cups of all-purpose flour, 1 teaspoon of baking powder, and a pinch of salt. Gradually add this dry mixture to the wet ingredients, mixing until just combined.
- In another bowl, beat together 8 oz of softened cream cheese, ¼ cup of granulated sugar, and 1 teaspoon of vanilla extract until smooth. Gently fold in 1 cup of fresh blueberries.
- Using a cookie scoop or tablespoon, drop spoonfuls of the cookie dough onto the prepared baking sheet, leaving enough space in between for spreading.
- Using a small spoon or toothpick, add dollops of the cream cheese mixture on top of each cookie dough ball. Swirl gently to create a marbled effect.
- Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden.
- Remove from the oven and let cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
