Ingredients

  • 2 pieces flatbread (810 inches each), store-bought naan or thin flatbreads
  • 2 cups cooked chicken, shredded or diced (grilled or rotisserie)
  • 1/2 cup BBQ sauce (smoky, slightly sweet preferred)
  • 1/2 medium red onion, thinly sliced (optional)
  • 1 cup shredded mozzarella cheese (full-fat)
  • A handful fresh cilantro, chopped (or parsley as substitute)
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Optional toppings: sliced jalapeños, diced bell peppers, drizzle of ranch dressing

Instructions

  1. Shred or dice the cooked chicken. Toss it in a mixing bowl with 1/2 cup BBQ sauce, salt, and pepper. Mix well to coat evenly.
  2. Place the flatbreads on a baking sheet. Brush the edges lightly with olive oil and sprinkle a pinch of salt on the edges if desired.
  3. Spread the BBQ chicken evenly over each flatbread, leaving the edges clear. Scatter thin slices of red onion over the top, then sprinkle generously with shredded mozzarella cheese.
  4. Preheat the oven to 425°F (220°C). Bake the flatbreads on the baking sheet for 10 to 12 minutes, or until the cheese is melted and bubbly and the edges are crisp and golden brown. Watch closely after 10 minutes to avoid burning.
  5. Remove from the oven and sprinkle chopped fresh cilantro on top. Add a drizzle of ranch or extra BBQ sauce if desired. Slice into wedges and serve immediately while warm and crispy.
