Description

This casserole is everything you love about a bacon cheeseburger, minus the bun. It’s hearty, cheesy, savory, and absolutely satisfying, perfect for a low carb dinner.


Ingredients

  • 1 lb ground beef (80/20 preferred)
  • 6 slices bacon
  • 2 cups shredded cheddar cheese
  • 3 large eggs
  • 1/2 cup heavy cream
  • 1 small yellow onion, diced
  • 1/3 cup pickles, chopped (optional)
  • Salt and pepper to taste
  • 1 tbsp mustard
  • 2 tbsp sugar-free ketchup

Instructions

  1. Preheat the oven to 375°F (190°C). Grease an 8×8 or 9×9-inch baking dish with cooking spray or butter.
  2. Cook the bacon in a large skillet over medium heat until crispy. Remove and set aside on a paper towel-lined plate.
  3. Drain most of the bacon grease, leaving about a tablespoon in the skillet. Add the diced onion and sauté until soft and translucent, about 3-4 minutes.
  4. Add the ground beef to the skillet with the onions. Season with salt and pepper. Cook until browned, breaking it up with a spatula as it cooks. Drain any excess grease.
  5. In a mixing bowl, whisk together the eggs, heavy cream, mustard, and ketchup until smooth.
  6. Spread the cooked beef mixture evenly in the greased baking dish. Sprinkle the chopped bacon and pickles on top, followed by the shredded cheese. Pour the egg mixture over everything, ensuring it’s evenly distributed.
  7. Bake in the preheated oven for 30-35 minutes, or until the egg mixture is set and the top is golden brown.
  8. Let the casserole cool for about 5 minutes before serving. Slice into squares and enjoy!
