- 3–4 pounds pork shoulder roast (or pork butt or pork loin roast)
- 2 tablespoons olive oil (extra virgin recommended)
- 2 teaspoons garlic powder
- 1 tablespoon salt (kosher salt preferred)
Instructions
- Pat the pork shoulder dry with paper towels.
- Rub the olive oil all over the roast.
- Sprinkle garlic powder and salt evenly over all sides of the roast.
- Let the roast sit at room temperature for 15 minutes if time allows.
- Preheat oven to 325°F (165°C).
- Heat a roasting pan or oven-safe skillet over medium-high heat on the stove.
- Sear the pork roast on all sides for 2-3 minutes until browned.
- Transfer the roast to the oven, using a rack if available.
- Roast for 1.5 to 2 hours until internal temperature reaches 195°F (90°C) for pull-apart pork or 145°F (63°C) for sliceable but juicy pork.
- Remove the roast from the oven and tent loosely with aluminum foil.
- Let rest for at least 15 minutes to allow juices to redistribute.
- Slice or shred the pork and serve immediately.
Notes
Do not skip searing the roast to develop a flavorful crust. Use a meat thermometer to avoid overcooking. Let the roast rest for at least 15 minutes before slicing to keep it juicy. Room temperature meat cooks more evenly. Adjust salt to taste. Variations include adding herbs, smoked paprika, or using a slow cooker.
