Ingredients

  • 1 lb (450g) boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1/2 cup (120ml) soy sauce
  • 1/4 cup (60ml) honey
  • 2 tablespoons (30ml) sesame oil
  • 1 tablespoon (15ml) cornstarch
  • 1 teaspoon grated fresh ginger
  • 1 garlic clove, minced
  • 2 medium zucchini, sliced into half-moons
  • 1 red bell pepper, sliced
  • 1/4 cup (30g) chopped green onions

Instructions

  1. In a small bowl, whisk together soy sauce, honey, sesame oil, cornstarch, ginger, and garlic. Set aside.
  2. Add chicken to the sauce and toss to coat. Let marinate for at least 10 minutes.
  3. While the chicken marinates, slice zucchini and bell pepper. Chop green onions for garnish.
  4. Heat a wok or large skillet over medium-high heat. Add the marinated chicken and stir-fry for 5–7 minutes until cooked through. Work in batches if needed.
  5. Add zucchini and bell pepper. Stir-fry for another 5–7 minutes until vegetables are tender-crisp.
  6. Garnish with chopped green onions and serve hot over rice, quinoa, or noodles.

Notes

Use high heat for best stir-fry results. Avoid overcrowding the pan and don’t overcook the vegetables. Add red pepper flakes for spice or swap in your favorite veggies like broccoli or mushrooms.
