Instructions
- In a small bowl, combine warm milk, sugar, and instant yeast. Let it sit for about 5 minutes until foamy.
- In a large mixing bowl, whisk together flour and salt. Make a well in the center and add the yeast mixture, egg, sugar, melted butter, vanilla extract, and warm milk. Stir until combined.
- Transfer the dough onto a floured surface and knead for about 5-7 minutes until smooth and elastic.
- Place the dough in a greased bowl, cover with a damp cloth, and let it rise in a warm place for about 1-2 hours, or until it doubles in size.
- Once risen, punch down the dough and roll it out to about 1/4 inch thickness.
- Cut the dough into 2-inch squares or triangles.
- Place the cut dough on a parchment-lined baking sheet and cover with a cloth. Let them rise for another 30 minutes.
- Heat about 3 inches of oil in a deep frying pan to 350°F.
- Fry a few beignets at a time for about 1-2 minutes on each side until golden brown.
- Transfer the fried beignets to a cooling rack placed over paper towels to drain excess oil. Dust them generously with powdered sugar.
