Ingredients
- 2 medium boneless, skinless grilled chicken breasts (about 12 oz / 340g)
- 2 cups corn kernels (fresh or frozen, about 300g)
- 2 tablespoons olive oil
- 1/4 cup mayonnaise (60ml, full-fat recommended)
- 2 tablespoons fresh lime juice
- 1/4 cup chopped cilantro
- 1 teaspoon garlic powder
- 1 teaspoon chili powder
- 1/2 cup crumbled cotija cheese (60g)
- 3 cups cooked brown rice or quinoa (600g)
- Salt and pepper to taste
Instructions
- Preheat your grill or skillet to medium-high heat (about 5 minutes).
- Brush chicken breasts with 1 tablespoon olive oil and season with salt, pepper, and a pinch of garlic powder. Grill for about 6 minutes per side until internal temperature reaches 165°F (74°C). Let rest for 5 minutes before slicing thinly.
- In a large skillet, heat 1 tablespoon olive oil over medium heat. Add corn kernels and cook, stirring occasionally, until slightly charred and fragrant, about 5 minutes.
- In a small bowl, whisk together mayonnaise, lime juice, cilantro, garlic powder, chili powder, salt, and pepper to make the street corn dressing.
- Pour the dressing over the warm corn and stir well to coat every kernel.
- Divide cooked brown rice or quinoa between bowls. Top with grilled chicken slices, dressed corn, and a generous sprinkle of crumbled cotija cheese.
- Optional: Garnish with extra cilantro leaves and a lime wedge. Add hot sauce if desired.
