Description

These mashed potato cheese puffs are golden, crispy on the outside, and filled with fluffy mashed potatoes and gooey cheese. Perfect for snacking, appetizers, or as a side dish during festive meals.

  • 2 cups mashed potatoes
  • 1 cup shredded cheddar cheese
  • 2 eggs, beaten
  • 1/4 cup breadcrumbs
  • 1/4 cup chopped green onions
  • Salt
  • Pepper

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Prepare the mashed potatoes by boiling peeled potatoes until fork-tender, then drain and mash with butter, cream, salt, and pepper until smooth.
  3. In a large mixing bowl, combine the mashed potatoes, cheddar cheese, beaten eggs, breadcrumbs, green onions, salt, and pepper. Mix until well incorporated.
  4. Using an ice cream scoop or spoon, portion out the mixture and shape into small balls or patties, about 1.5 inches in diameter.
  5. Roll each puff in breadcrumbs to coat all sides.
  6. Place the coated puffs on a lined baking sheet, leaving space between them.
  7. Bake in the preheated oven for about 20-25 minutes or until golden brown and crispy, flipping halfway through for even browning.
  8. Let them cool for a few minutes before serving.
