- 2 eggs, beaten

Instructions
- Preheat your oven to 400°F (200°C).
- Prepare the mashed potatoes by boiling peeled potatoes until fork-tender, then drain and mash with butter, cream, salt, and pepper until smooth.
- In a large mixing bowl, combine the mashed potatoes, cheddar cheese, beaten eggs, breadcrumbs, green onions, salt, and pepper. Mix until well incorporated.
- Using an ice cream scoop or spoon, portion out the mixture and shape into small balls or patties, about 1.5 inches in diameter.
- Roll each puff in breadcrumbs to coat all sides.
- Place the coated puffs on a lined baking sheet, leaving space between them.
- Bake in the preheated oven for about 20-25 minutes or until golden brown and crispy, flipping halfway through for even browning.
- Let them cool for a few minutes before serving.
Notes
For a vegan option, use non-dairy cheese and egg substitutes. Store leftovers in an airtight container for up to 3 days.
