Instructions
- Preheat your oven to 350°F (175°C). Line your baking sheets with parchment paper.
- In a medium bowl, whisk together the flour, baking powder, and salt. Set it aside.
- In a large mixing bowl, cream the softened butter and granulated sugar together using an electric mixer until light and fluffy, about 2-3 minutes.
- Beat in the egg, lemon zest, lemon juice, and finely chopped lavender until well combined.
- Gradually add the dry ingredients to the wet mixture, mixing just until combined. Be careful not to overmix!
- Use a tablespoon to scoop out the dough and roll it into balls. Place them on the prepared baking sheets, spacing them about 2 inches apart.
- Bake for 10-12 minutes or until the edges are lightly golden. They’ll look a bit soft but will firm up as they cool.
- Let the cookies cool on the baking sheets for about 5 minutes before transferring them to a cooling rack to cool completely.
- In a mixing bowl, beat the softened butter until creamy. Gradually add powdered sugar, heavy cream, and vanilla extract. Mix until smooth. Then, stir in the chopped lavender and lemon juice.
- Once the cookies are cool, spread a generous dollop of lavender buttercream on the flat side of one cookie and top it with another cookie, creating a sandwich. Repeat until all cookies are filled.
