Description

These lemon crumb bars are a delightful balance of tart and sweet, perfect for any occasion. Easy to make and visually appealing, they are sure to impress your friends and family.


Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup granulated sugar
  • 1/4 cup unsalted butter, softened
  • 2 large eggs
  • 2 lemons (juice and zest)
  • 1 cup granulated sugar
  • 1/4 cup all-purpose flour
  • 1 teaspoon baking powder
  • Powdered sugar for dusting

Instructions

  1. Preheat your oven to 350°F (175°C). Grease your 9×9-inch baking pan with a bit of butter or line it with parchment paper for easy removal.
  2. In a large mixing bowl, combine 1 cup of all-purpose flour, 1/2 cup of granulated sugar, and 1/4 cup of softened unsalted butter. Use your fingers or a pastry cutter to mix until crumbly. Press this mixture evenly into the bottom of the prepared pan to form the crust.
  3. Bake the crust for 15-18 minutes, or until lightly golden. While it’s baking, you can prepare the filling!
  4. In another bowl, whisk together 2 large eggs, the juice of 2 lemons, 1 cup of granulated sugar, 1/4 cup of all-purpose flour, and 1 teaspoon of baking powder until well combined.
  5. Once the crust is done, remove it from the oven and pour the lemon filling over the hot crust. Return it to the oven and bake for an additional 20-25 minutes, or until the filling is set and slightly firm to the touch.
  6. Remove from the oven and let it cool at room temperature for about an hour. Then refrigerate for at least 2 hours to set fully.
  7. Once chilled, remove from the pan using the parchment paper (if used). Dust with powdered sugar before slicing into squares. Enjoy!

Notes

For a gluten-free version, use a 1:1 gluten-free flour blend. Store in an airtight container in the fridge for up to a week.
