- 1 cup all-purpose flour
- 1/2 cup granulated sugar
- 1/4 cup unsalted butter, softened
- 2 large eggs
- 2 lemons (juice and zest)
- 1 cup granulated sugar
- 1/4 cup all-purpose flour
- 1 teaspoon baking powder
- Powdered sugar for dusting
Instructions
- Preheat your oven to 350°F (175°C). Grease your 9×9-inch baking pan with a bit of butter or line it with parchment paper for easy removal.
- In a large mixing bowl, combine 1 cup of all-purpose flour, 1/2 cup of granulated sugar, and 1/4 cup of softened unsalted butter. Use your fingers or a pastry cutter to mix until crumbly. Press this mixture evenly into the bottom of the prepared pan to form the crust.
- Bake the crust for 15-18 minutes, or until lightly golden. While it’s baking, you can prepare the filling!
- In another bowl, whisk together 2 large eggs, the juice of 2 lemons, 1 cup of granulated sugar, 1/4 cup of all-purpose flour, and 1 teaspoon of baking powder until well combined.
- Once the crust is done, remove it from the oven and pour the lemon filling over the hot crust. Return it to the oven and bake for an additional 20-25 minutes, or until the filling is set and slightly firm to the touch.
- Remove from the oven and let it cool at room temperature for about an hour. Then refrigerate for at least 2 hours to set fully.
- Once chilled, remove from the pan using the parchment paper (if used). Dust with powdered sugar before slicing into squares. Enjoy!
Notes
For a gluten-free version, use a 1:1 gluten-free flour blend. Store in an airtight container in the fridge for up to a week.
