Ingredients

  • 1/2 cup unsalted butter
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1/3 cup cocoa powder
  • 1/4 teaspoon salt
  • 1/2 cup chocolate chips
  • 1/2 cup brown sugar
  • 1/4 cup granulated sugar for filling
  • 1 cup all-purpose flour for filling
  • 1/4 teaspoon salt for filling
  • 1 cup chocolate chips for filling

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Line two baking sheets with parchment paper or silicone baking mats.
  3. In a large mixing bowl, cream together 1/2 cup of unsalted butter and 1/2 cup of granulated sugar until light and fluffy.
  4. Beat in 2 large eggs, one at a time, followed by 1 teaspoon of vanilla extract.
  5. In another bowl, whisk together 1 cup of all-purpose flour, 1/3 cup of cocoa powder, and 1/4 teaspoon of salt. Gradually add this mixture to the wet ingredients, mixing until just combined.
  6. Gently stir in 1/2 cup of chocolate chips until evenly distributed.
  7. Using a cookie scoop, drop rounded tablespoons of dough onto the prepared baking sheets, leaving space between each.
  8. Place the baking sheets in the preheated oven and bake for 10-12 minutes.
  9. Allow the cookies to cool on the baking sheets for about 5 minutes before transferring them to a cooling rack.
  10. In a medium bowl, combine 1/2 cup of unsalted butter, 1/4 cup of granulated sugar, and 1/2 cup of brown sugar. Beat until creamy, then add in 1 cup of all-purpose flour, 1/4 teaspoon of salt, and 1 cup of chocolate chips. Mix until combined.
  11. Once the brownie cookies are completely cooled, spread a generous amount of cookie dough filling on the flat side of one cookie, then top with another cookie.
  12. Serve and enjoy.
