Description
An easy, hands-off slow cooker recipe for tender and juicy steak bites with simple ingredients and rich flavor, perfect for busy weeknights or weekend dinners.
Ingredients
- 1.5 pounds sirloin steak or sirloin tip, cut into 1-inch cubes
- 4 cloves garlic, minced (about 2 teaspoons)
- 1/4 cup low-sodium soy sauce (60 ml)
- 2 tablespoons Worcestershire sauce (30 ml)
- 1/2 cup low-sodium beef broth (120 ml)
- 1 tablespoon olive oil (15 ml), optional for searing
- 1 teaspoon onion powder
- 1/2 teaspoon freshly ground black pepper
- Salt to taste
- 1 tablespoon fresh thyme or rosemary, chopped (or 1 teaspoon dried), optional
Instructions
- Trim any excess fat from the sirloin and cut into roughly 1-inch cubes. Toss the steak bites in a bowl with garlic, soy sauce, Worcestershire sauce, olive oil, onion powder, black pepper, and thyme if using. Stir well to coat all pieces.
- Optional: Heat a large skillet over medium-high heat and sear the steak bites in batches for 1-2 minutes per side to develop a brown crust. This step adds extra flavor but can be skipped.
- Place the steak bites into the slow cooker and pour in the beef broth. Stir gently to combine.
- Cover and cook on low for 4 to 5 hours until the steak bites are tender. Avoid opening the lid frequently to maintain heat.
- After cooking, taste and adjust seasoning with salt and pepper if needed. Stir well and serve immediately over mashed potatoes, rice, or noodles. Optionally, top with fresh parsley or a squeeze of lemon.
- Pro tip: For a thicker sauce, remove the steak bites with a slotted spoon and simmer the cooking liquid on the stovetop until reduced and glossy, then pour it back over the meat.
Notes
Searing the steak bites before slow cooking adds extra flavor and texture but is optional. Use low and slow heat to prevent toughening or mushy meat. Fresh garlic is preferred over garlic powder for better flavor. Save the cooking liquid as a flavorful sauce or base for soups. Avoid overcooking by checking tenderness around 4 hours. Let the meat rest for 5 minutes before serving. For thicker sauce, reduce the cooking liquid on the stovetop or add a cornstarch slurry.
