Description

Ingredients

  • 4 boneless, skinless chicken breasts (about 1.5 pounds / 700g)
  • ½ cup chopped sun-dried tomatoes (70g), jarred in oil
  • 4 garlic cloves, minced
  • 1 cup heavy cream (240ml)
  • ½ cup grated Parmesan cheese (50g), freshly grated
  • 1 cup low-sodium chicken broth (240ml)
  • 1 teaspoon Italian seasoning
  • ¼ teaspoon red pepper flakes
  • Salt to taste (about ½ teaspoon)
  • Black pepper to taste
  • 1 tablespoon olive oil (15ml)

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add minced garlic and chopped sun-dried tomatoes. Stir constantly for 2-3 minutes until fragrant and tomatoes soften.
  2. Pat chicken breasts dry and season both sides with salt, black pepper, and Italian seasoning.
  3. Place the seasoned chicken breasts at the bottom of the slow cooker. Pour the sautéed garlic and sun-dried tomato mixture over the chicken.
  4. Add chicken broth and heavy cream to the slow cooker. Sprinkle red pepper flakes evenly over the top.
  5. Cover and cook on low for 3 to 4 hours until chicken is tender and cooked through.
  6. About 10 minutes before serving, sprinkle grated Parmesan cheese over the chicken. Stir gently to combine and let the cheese melt into the sauce.
  7. Serve hot with sauce spooned over the top. Pair with pasta, mashed potatoes, or steamed vegetables.

Notes

Sauté garlic and sun-dried tomatoes before adding to the crockpot for deeper flavor. Use freshly grated Parmesan cheese to avoid grainy sauce. If sauce is too thin, remove chicken and simmer sauce on stovetop to thicken. Avoid freezing leftovers as cream sauce can separate. Reheat gently with added broth or cream.
