Description

  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 1 tablespoon olive oil
  • 4 garlic cloves, minced
  • ½ cup chopped sun-dried tomatoes packed in oil
  • 1 cup low-sodium chicken broth
  • 1 cup heavy cream
  • ½ cup freshly grated Parmesan cheese
  • 1 teaspoon Italian seasoning (or mix of dried basil, oregano, and thyme)
  • ¼ teaspoon red pepper flakes (optional)
  • Salt and pepper to taste
  • Fresh basil for garnish

Instructions

  1. Heat olive oil in a large skillet over medium-high heat. Season chicken breasts lightly with salt and pepper, then sear for 2-3 minutes per side until golden brown. (Optional step)
  2. In a small bowl, combine minced garlic, chopped sun-dried tomatoes, chicken broth, heavy cream, Italian seasoning, red pepper flakes, and half of the grated Parmesan. Stir well.
  3. Place the seared chicken breasts in the slow cooker. Pour the sauce mixture evenly over the chicken. Sprinkle the remaining Parmesan on top.
  4. Cover and cook on LOW for about 4 hours until chicken is tender and sauce is thickened. Alternatively, cook on HIGH for 2-3 hours but watch closely to prevent sauce separation.
  5. Taste the sauce and adjust salt and pepper if needed. Stir gently to combine sauce and chicken.
  6. Garnish with fresh basil before serving.

Notes

Searing the chicken before slow cooking adds flavor and texture but can be skipped if short on time. Add delicate vegetables like spinach or mushrooms in the last 30 minutes to keep their texture. Use low heat to prevent cream sauce from separating. Leftovers keep well in the fridge for up to 4 days but freezing is not recommended due to sauce separation.
