  • 1 pound smoked kielbasa, sliced into ½-inch rounds
  • 1 pound fresh green beans, trimmed and halved
  • 4 garlic cloves, minced
  • 1 cup low-sodium chicken broth
  • 1 tablespoon olive oil
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • ½ teaspoon black pepper
  • Salt to taste
  • ¼ teaspoon red pepper flakes (optional)

Instructions

  1. Trim the ends off the fresh green beans and cut them in half. Slice the kielbasa into ½-inch rounds. Mince the garlic cloves finely. Measure out spices and broth.
  2. Heat olive oil in a skillet over medium heat. Add minced garlic and sauté for 1-2 minutes until fragrant and lightly golden. Be careful not to burn the garlic. (Optional but recommended)
  3. Place sliced kielbasa in the bottom of the crockpot. Add green beans on top, then the sautéed garlic.
  4. Sprinkle onion powder, smoked paprika, black pepper, and red pepper flakes (if using) evenly over the ingredients.
  5. Pour in the chicken broth.
  6. Cover and cook on high for 25 to 30 minutes until green beans are tender but still crisp and kielbasa is warmed through.
  7. Stir, taste, and add salt if needed. Serve hot straight from the crockpot.

Notes

Sautéing garlic before adding to the crockpot enhances flavor. Use fresh green beans for best texture. Keep an eye on cooking time to avoid mushy beans.
