Description

  • 2 pounds beef stew meat (chuck or sirloin tips)
  • 1.5 pounds baby potatoes (red or Yukon gold), halved or quartered
  • 6 cloves garlic, minced (about 2 tablespoons)
  • 6 tablespoons unsalted butter (85g), softened
  • 1 cup beef broth (240ml), low sodium
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon fresh thyme, chopped (optional)
  • Salt and black pepper, to taste
  • Fresh parsley, for garnish

Instructions

  1. Halve or quarter baby potatoes to bite-sized pieces. Mince garlic cloves finely. Chop fresh thyme if using. Pat beef stew meat dry with paper towels.
  2. In a mixing bowl, combine softened butter, minced garlic, Worcestershire sauce, chopped thyme, salt, and pepper. Stir until well mixed.
  3. Add beef stew meat and potatoes to the bowl with the garlic butter sauce. Toss until all pieces are evenly coated.
  4. Transfer the coated beef and potatoes to the slow cooker. Pour beef broth around the sides, avoiding pouring directly on the meat.
  5. Cover and cook on low for 4 to 5 hours, or until beef is fork-tender and potatoes are soft but not falling apart. Stir gently halfway through if possible.
  6. When done, toss gently, taste and adjust seasoning with salt and pepper. Sprinkle fresh parsley on top before serving.
