- 1 pound smoked kielbasa sausage, sliced
- 2 cups shredded sharp cheddar cheese
- 2 cups frozen mixed vegetables (peas, carrots, corn)
- 1 medium yellow onion, diced
- 3 cloves garlic, minced
- 4 ounces cream cheese, softened
- 1/2 cup sour cream
- 1 cup low-sodium chicken broth
- 1 teaspoon smoked paprika
- Salt and black pepper to taste (about 1/2 teaspoon salt)
- Optional: 4 cups cooked pasta or rice for serving
Instructions
- Slice the kielbasa into 1/2-inch rounds, dice the onion, and mince the garlic. No need to thaw frozen vegetables.
- Layer the kielbasa slices at the bottom of the crockpot. Sprinkle diced onion and garlic over the top, then add the frozen mixed vegetables.
- Pour chicken broth evenly over the ingredients. Sprinkle smoked paprika, salt, and black pepper. Stir gently to combine without disturbing layers.
- Cook on low for 3 to 4 hours, or on high for 2 hours if short on time.
- When cooking is complete, add softened cream cheese, sour cream, and shredded cheddar. Stir gently until cheese melts and sauce is creamy. Add a splash of broth or water if too thick.
- Serve over cooked pasta, rice, or mashed potatoes with optional sides like a green salad or steamed green beans.
Notes
Do not skip the cream cheese for the silky sauce. Use low heat for best flavor and texture. Frozen vegetables work well without thawing. Add cheese at the end to avoid greasiness. Leftovers reheat well with a splash of broth. Avoid freezing as cheese sauce may separate.
