- 1.5 lbs boneless skinless chicken thighs
- 1.5 lbs baby potatoes, halved (Yukon Gold or red)
- 3 large carrots, peeled and chopped (about 150g)
- 2 celery stalks, chopped (about 100g)
- 1 medium yellow onion, diced (about 200g)
- 4 garlic cloves, minced
- 4 cups low-sodium chicken broth
- 14.5 oz can diced tomatoes (411g)
- 2 tablespoons Worcestershire sauce
- 1 teaspoon Italian seasoning (or mix of dried basil, oregano, thyme)
- Salt and black pepper to taste
- 2 tablespoons olive oil
- 1 cup frozen peas (optional)
Instructions
- Heat olive oil in a large skillet over medium-high heat. Season chicken thighs lightly with salt and pepper.
- Brown chicken thighs on each side for 3-4 minutes until golden but not cooked through. Transfer chicken to the crock pot.
- In the same skillet, add diced onion, carrots, and celery. Cook, stirring occasionally, until softened, about 5 minutes.
- Add minced garlic and cook for 1 more minute until fragrant. Scrape up any browned bits from the chicken and transfer all to the crock pot.
- Add halved baby potatoes, chicken broth, diced tomatoes with juices, Worcestershire sauce, Italian seasoning, and a pinch of salt and pepper to the crock pot. Stir gently to combine.
- Cover and cook on high for 4-5 hours or on low for 7-8 hours until potatoes and chicken are tender and flavors meld.
- About 10 minutes before serving, stir in frozen peas if using. Taste and adjust salt and pepper. For thicker stew, cook uncovered on high for the last 15 minutes.
- Ladle stew into bowls and serve, optionally topped with fresh parsley or grated Parmesan.
Notes
Browning the chicken before slow cooking adds rich flavor but can be skipped for convenience. Use low-sodium broth to control salt levels. Add frozen peas at the end for color and sweetness. Leftovers taste better the next day. Avoid freezing due to potato texture changes.
