  • 1.5 pounds beef sirloin or flank steak, sliced into thin strips
  • 3 medium bell peppers (mixed colors: red, yellow, green), sliced
  • 1 large yellow onion, sliced
  • 1 cup beef broth (low-sodium recommended)
  • 1/4 cup soy sauce
  • Optional: 1 teaspoon garlic powder or 2 cloves fresh garlic, minced

Instructions

  1. Slice beef against the grain into thin strips.
  2. Slice bell peppers and onion into strips of roughly the same size.
  3. If using fresh garlic, mince it now.
  4. In a mixing bowl, toss the sliced beef with soy sauce and garlic powder or fresh garlic if using. Let sit while prepping veggies.
  5. Place sliced onions and bell peppers at the bottom of the slow cooker.
  6. Spread the marinated beef on top of the veggies.
  7. Pour beef broth over everything and gently stir to combine without overmixing.
  8. Cover and cook on LOW for 4-6 hours (5 hours recommended for best tenderness).
  9. Once done, stir the mixture well. If sauce is too thin, mix 1 teaspoon cornstarch with 1 tablespoon cold water, stir into the crock pot, and cook on HIGH for 10-15 minutes to thicken.
  10. Serve over steamed rice, egg noodles, or mashed potatoes.
