- 2 pounds boneless, skinless chicken breasts
- 1 can (10.5 oz) condensed cream of chicken soup
- 1 cup sour cream (full-fat)
- 1 teaspoon onion powder
- 1 teaspoon garlic powder
- ½ teaspoon salt (adjust to taste)
- ½ teaspoon black pepper (adjust to taste)
- ½ cup chicken broth (low sodium)
- 2 tablespoons lemon juice (freshly squeezed)
- 1 tablespoon dried parsley
- ¼ cup grated Parmesan cheese (optional)
- ¼ teaspoon red pepper flakes (optional)
Instructions
- In a mixing bowl, combine the condensed cream of chicken soup, sour cream, chicken broth, onion powder, garlic powder, salt, pepper, lemon juice, and dried parsley. Whisk until smooth.
- Place the chicken breasts in the bottom of the slow cooker.
- Pour the sauce evenly over the chicken, coating each piece well. Do not stir.
- Cover and cook on low for 4 to 5 hours, until the chicken is tender and easily shredded with a fork.
- About 10 minutes before serving, sprinkle grated Parmesan cheese over the top and cover to let it melt. Add red pepper flakes if desired.
- Serve the chicken with sauce over mashed potatoes, rice, or buttery noodles.
Notes
Do not cook on high to avoid drying out the chicken. Stirring halfway through is optional. Use fresh lemon juice to brighten the sauce. Grate your own Parmesan for best melting. Add vegetables like baby carrots or mushrooms at the start for extra nutrition. If sauce is too thin, stir in cream cheese or cook uncovered for 15 minutes to thicken.
