Instructions
- Peel and slice potatoes into 1/4-inch sticks. Soak in cold water for at least 30 minutes, then pat dry thoroughly.
- Preheat oven to 425°F (or air fryer to 400°F). Toss potatoes with olive oil, minced garlic, rosemary, and a pinch of salt.
- Spread fries in a single layer on a parchment-lined baking sheet (or air fryer basket). Bake for 25–30 minutes, flipping halfway, until golden and crispy.
- Transfer hot fries to a bowl. Drizzle with truffle oil, sprinkle with Parmesan cheese, and toss to coat.
- Garnish with chopped parsley and serve immediately for maximum crispness and flavor.

For ultra-crispy fries, use the double-fry method: first fry at 325°F for 5 minutes, then again at 375°F until golden. Store cooled fries in an airtight container and reheat in an oven or air fryer for best texture.
