Ingredients

  • 6 medium russet potatoes
  • 2 tablespoons white or black truffle oil
  • 3 tablespoons grated Parmesan cheese
  • 1 garlic clove, minced
  • 2 rosemary sprigs
  • Chopped parsley leaves, to taste
  • Fine salt, to taste
  • 2 tablespoons olive oil (for baking) or grapeseed oil (for frying)

Instructions

  1. Peel and slice potatoes into 1/4-inch sticks. Soak in cold water for at least 30 minutes, then pat dry thoroughly.
  2. Preheat oven to 425°F (or air fryer to 400°F). Toss potatoes with olive oil, minced garlic, rosemary, and a pinch of salt.
  3. Spread fries in a single layer on a parchment-lined baking sheet (or air fryer basket). Bake for 25–30 minutes, flipping halfway, until golden and crispy.
  4. Transfer hot fries to a bowl. Drizzle with truffle oil, sprinkle with Parmesan cheese, and toss to coat.
  5. Garnish with chopped parsley and serve immediately for maximum crispness and flavor.

Notes

For ultra-crispy fries, use the double-fry method: first fry at 325°F for 5 minutes, then again at 375°F until golden. Store cooled fries in an airtight container and reheat in an oven or air fryer for best texture.
