- 4 boneless, skinless chicken breasts
- 4 slices mozzarella cheese
- 1 cup panko breadcrumbs
- 1/4 cup Parmesan cheese, freshly grated
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- 2 eggs, beaten
- 1/2 cup all-purpose flour
- 4 tablespoons olive oil
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- Use a sharp knife to carefully cut a pocket into each chicken breast, making sure not to slice all the way through. Season the chicken inside and out with salt and pepper.
- Place a slice of mozzarella inside each pocket. Avoid overstuffing to prevent cheese from spilling out during cooking.
- Set up a breading station: In one bowl, mix breadcrumbs, Parmesan, garlic powder, paprika, and a pinch of salt. In a second bowl, beat the eggs. In a third shallow dish, place the flour.
- Dredge each stuffed chicken breast in flour, then dip into the beaten eggs, and finally coat in the breadcrumb mixture. Press the breadcrumbs onto the chicken to ensure full coverage.
- Heat olive oil in a cast iron skillet over medium heat. Add the chicken and cook for 2-3 minutes per side, just until golden brown.
- Transfer the skillet to the preheated oven and bake for 20 minutes or until the chicken reaches an internal temperature of 165°F (74°C).
- Let the chicken rest for 5 minutes before serving to allow the juices to redistribute.
