Description

A quick and easy recipe for crispy garlic parmesan roasted shrimp with a golden, crunchy crust and garlicky, cheesy flavor. Perfect for weeknight dinners or impressing guests.

  • 1 pound (450g) large shrimp, peeled and deveined
  • ¾ cup (75g) panko breadcrumbs
  • ½ cup (50g) grated Parmesan cheese
  • 4 large garlic cloves, minced
  • 3 tablespoons (45g) unsalted butter, melted
  • 2 tablespoons (30ml) olive oil
  • 2 tablespoons fresh parsley, finely chopped (optional)
  • Lemon wedges, for serving
  • Salt and pepper, to taste

Instructions

  1. Preheat your oven to 425°F (220°C). Line a rimmed baking sheet with parchment paper or lightly grease it with olive oil.
  2. In a small skillet over low heat, melt the butter. Add the minced garlic and cook gently for about 2 minutes until fragrant and soft, but not browned.
  3. In a medium bowl, combine panko breadcrumbs, grated parmesan, salt (about ½ teaspoon), and pepper (¼ teaspoon). Pour in the warm garlic butter and olive oil. Stir until the mixture is evenly coated and looks crumbly but moist.
  4. Pat your shrimp dry with paper towels. Season lightly with salt and pepper.
  5. Add the shrimp to the bowl with the panko-parmesan mixture. Toss gently with tongs or a fork until each shrimp is well coated. Do this in batches if necessary.
  6. Place the coated shrimp in a single layer on your prepared baking sheet, leaving a little space between each one.
  7. Roast in the preheated oven for about 8-10 minutes, turning halfway through, until shrimp are pink and opaque with a golden, crispy coating.
  8. Remove from oven and sprinkle with chopped fresh parsley. Serve immediately with lemon wedges on the side.

Notes

Pat shrimp dry to ensure a crispy coating. Keep garlic butter on low heat to avoid burning. Do not overcrowd the baking sheet to prevent steaming. Turn shrimp halfway through roasting for even crispiness. For a gluten-free version, use gluten-free panko or crushed gluten-free crackers. Freshly grated parmesan is preferred for better flavor and melting.
