Ingredients
- Bone-in, skin-on chicken thighs
- Unsalted butter
- Fresh garlic, minced
- Olive oil
- Fresh parsley, chopped
- Salt
- Pepper
- Fresh lemon juice
Instructions
- Preheat the oven to 400°F (200°C). If your skillet isn’t oven-safe, grease a baking dish to use later.
- Pat the chicken thighs dry with paper towels. Rub them with olive oil and season generously with salt and pepper.
- Heat a skillet over medium-high heat and add a drizzle of olive oil. Place the chicken thighs skin-side down and cook undisturbed for 4-5 minutes until the skin is golden and crispy. Flip and cook the other side for 2-3 minutes.
- Reduce the heat to medium-low, add the butter to the pan, and let it melt. Stir in the minced garlic and cook for about 1 minute until fragrant.
- Transfer the skillet to the preheated oven (or move the chicken and sauce to a baking dish). Roast for 20-25 minutes, or until the chicken reaches an internal temperature of 165°F (74°C).
- Squeeze fresh lemon juice over the chicken and sprinkle with parsley. Serve immediately and spoon the garlic butter sauce over everything.
