Description
Tender, flaky cod wrapped in a crispy golden crust made healthier and easier with an air fryer. Ready in under 20 minutes!
Ingredients
Scale
- 4 cod fillets (around 6 ounces each), fresh or thawed
- ¾ cup panko breadcrumbs
- ½ cup all-purpose flour (or almond flour for gluten-free)
- 2 large eggs, whisked
- 1 tsp garlic powder
- ½ tsp paprika
- ½ tsp salt
- ¼ tsp black pepper
- Cooking spray
- Lemon wedges for serving
Instructions
- Preheat the air fryer to 400°F (200°C) for 2 minutes.
- Set up three breading stations: one bowl with flour, one with whisked eggs, and one with panko breadcrumbs mixed with garlic powder, paprika, salt, and pepper.
- Pat the cod fillets dry with paper towels. Dip each fillet into the flour, then into the egg mixture, and finally into the seasoned breadcrumbs, ensuring full coverage.
- Spray the air fryer basket with cooking spray. Place the breaded cod fillets in a single layer without overlapping. Spray the tops lightly with cooking spray.
- Air fry the cod fillets for 8-10 minutes, flipping halfway through, until golden brown and flaky.
- Serve the cod with fresh lemon wedges and enjoy.
