- 4 medium zucchinis (about 6 cups chopped)
- 1 medium onion, diced
- 3 cloves garlic, minced
- 2 tablespoons olive oil
- 4 cups vegetable broth (or chicken broth)
- Salt and pepper to taste
- Optional toppings: fresh herbs (parsley or basil), olive oil drizzle, grated Parmesan cheese
Instructions
- Wash and chop the zucchini into 1-inch chunks. Dice the onion and mince the garlic.
- Heat 2 tablespoons of olive oil in a large soup pot over medium heat. Add the onion and garlic, stirring occasionally, until softened and fragrant (about 5 minutes).
- Add the zucchini to the pot and stir to coat in the onion and garlic mixture. Pour in the vegetable broth, bring to a boil, then reduce heat to medium-low and simmer until the zucchini is tender (about 10 minutes).
- Remove the pot from heat and blend the soup until smooth using an immersion blender or a regular blender (in batches).
- Season with salt and pepper to taste. Optionally, add a pinch of cayenne for heat.
- Serve the soup in bowls and top with parsley, basil, Parmesan cheese, or a drizzle of olive oil.
