- 2 pounds boneless, skinless chicken breasts or thighs
- 1 can (13.5 oz) full-fat coconut milk
- 1/2 cup creamy peanut butter
- 1/4 cup soy sauce
- 3 tablespoons honey
- 2 tablespoons rice vinegar
- 3 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- 2 tablespoons lime juice
- 1–2 teaspoons sriracha or chili paste (optional)
- Chopped peanuts and cilantro for garnish
Instructions
- Spray the inside of the slow cooker with cooking spray or lightly grease it with oil.
- Place the chicken breasts or thighs at the bottom of the slow cooker.
- In a mixing bowl, whisk together coconut milk, peanut butter, soy sauce, honey, rice vinegar, garlic, ginger, lime juice, and sriracha (if using) until smooth.
- Pour the sauce over the chicken, ensuring it is evenly covered.
- Cover and cook on low for 6-7 hours or high for 3-4 hours.
- Once cooked, use two forks to shred the chicken in the slow cooker and stir it into the sauce.
- Garnish with chopped peanuts and fresh cilantro. Serve over rice, noodles, or your preferred base.
