- 4 cups broccoli florets (~500g)
- 2 tablespoons butter (~28g)
- 2 tablespoons all-purpose flour (~16g)
- 4 cups chicken stock (~950ml)
- 1 ½ cups shredded smoked Gouda cheese (~150g)
- 1 cup heavy cream (~240ml)
- 1 medium yellow onion, diced
- 3 cloves garlic, minced
- Salt & pepper to taste
- Optional: pinch of cayenne pepper
- Optional: crumbled bacon
- Optional: croutons
Instructions
- Chop broccoli into small florets, dice the onion, and mince the garlic.
- In a large pot, melt butter over medium heat. Add diced onion and sauté until soft and translucent, about 3 minutes. Stir in garlic and cook for another minute.
- Sprinkle flour over the onion and garlic mixture. Stir constantly for 1-2 minutes to cook off the raw flour taste.
- Slowly pour in chicken stock, whisking to combine. Bring to a gentle boil, then reduce heat and let simmer. Add broccoli florets and cook until tender, about 8-10 minutes.
- Using an immersion blender, puree the soup until smooth. If using a regular blender, work in batches and be cautious with hot liquid.
- Stir in shredded smoked Gouda and heavy cream. Keep heat on low and stir until cheese melts completely. Taste and season with salt, pepper, and cayenne if desired.
- Ladle into bowls, garnish with croutons or crumbled bacon, and serve.
